Today I went and dropped off Sirius with my nephew for the next 13 days! It's the first time we're leaving him! I'm nervous but he can't be left alone because he's so wittle still! I know my nephew will take great care of him! But it still makes me nervous!      We disassembled his cage, took it over to my brother and sister in laws and got everything set up!      Then my sweetie sister made me spaghetti squash for supper!       Tomorrow is the day and I am getting anxious!  XOXO

Plant based!

I started by roasting some bell peppers, onions and tomatoes from my garden! I topped them with vegan butter, fresh frozen garlic with olive oil, everything seasoning, pink salt and pepper! Roasted them in the oven for 30 minutes at 350!      When I took them out, I added them to my blender, added in around 1/2 cup of unsweetened almond milk and blended until smooth!        Then I added in some vegan cheese and cream cheese and simmered it over a medium hot heat while my fresh homemade gluten free pasta boiled !  Here's the final result!  XOXO

A sunday well spent...

Image
A Sunday spent reflecting is a Sunday well spent!      I have literally come SO far in just two years.      It hasn’t just been about losing weight.      It’s been about losing myself and finding who I really am.      It’s been about losing the notion that there was something wrong with me and that I had nothing left worth fighting for. I admit, I was wrong.      It’s been about proving to myself that I wasn’t a quitter! I DON’T quit everything I start with some lame excuse as to why I quit, “life is busy” “life is hard” yada, yada!      I didn’t quit on myself and that’s the most important part.      Even now, that life is hard for me again and I’m going through it medically, I’m not giving up! Even though I want to sometimes! I’m a different person, I’m a stronger person and I’m a grateful person.      I’m also a person who weighs 140 pounds l...

Another day another doctor...

I had another doctor appointment today where we talked about my next steps.  We're starting with nutrition! So naturally, we're sending me to a nutritionist! To talk about positive ways I can incorporate foods and how I should be eating them!  I'm both nervous and excited because I've never been to one before! So I don't know what to expect!  I got new medication for my anxiety and I finally got the validation I was looking for! Doctors FINALLY heard me! I finally have a doctor who sees me and hears me! It's incredible!  If you don't have that, don't stop looking until you find it!  XOXO

My long, exhausting day!

Farmers market fit! Got up, did a 10 mile bike ride, showered, ate a shake and managed to make it to the midland farmers market before it closed to get some awesome fruits and veggies for the rest of the week!      Now I’m off to do some art for my class!      And for dinner, I am going to use my grill as much as I can before winter strikes! It turned out to be a beautiful day though!      Pineapple, chicken, bell peppers and onions! Then dressing it with a homemade Asian peanut glaze!
