White Chicken Chili...The GF/DF way!
Add to your crockpot:
4 chicken breasts
1 whole carton of chicken stock
1 can of green chilis (spicy or not, your choice)
1 can of corn
2 cans of cannellini beans
3 stalks of celery
a few carrots or carrot shreds
1 medium sized onion
your favorite seasonings (I used everything seasoning and pepper)
Put it on low heat and walk away for like 4 hours
Come back, shred your chicken, add like 2-3 tablespoons of dairy free cream cheese, a few splashes of your choice of dairy free milk, take some of the broth and add it to a cup, add a few tablespoons of gluten free flour to the broth, whisk it together, add it back into the crockpot and let it cook for 45-1 hour longer!
Then it's time to eat! Top with your favorite toppings and enjoy!
I used vegan cheese, tortilla chips and avocado and some fresh garden herbs!
