Vegan chickpea, potato and broccoli bowl with homemade tahini sauce:

  • 1 can drained chickpeas 
  • 1 medium broccoli bundle (frozen is great too!)
  • 2-3 potatoes depending on size (skinned and boiled)
  • 1-2 handfuls of spinach
  • chopped up Serrano pepper or jalapeño depending on how spicy you like it!
    Add 1-2 tablespoons of preferred oil to a hot pan and add your peppers and chickpeas. Sauté until the chickpeas have some color and the peppers are soft. 

    Add your boiled potatoes to the air fryer to crisp them up and give them some texture, season with salt and pepper.

    Dump your peppers and chickpeas into a separate bowl and then add your broccoli into your hot already oiled pan and let that sauté with a touch of water (if using fresh) and no water (if using frozen)let the broccoli cook until you're satisfied with the doneness and it has some color! then add the broccoli to your chickpea and pepper mixture and mix! (season everything with a little salt and pepper to taste)

    Once you have that done, add a few handfuls of spinach to your bowl, add your chickpeas, broccoli and peppers to the top. Top that off with your crispy potatoes and then add your delicious homemade Tahini sauce! 

    Bonus tip: If you aren't vegan, add chicken, it's also delicious! 

Homemade Tahini:

  • 1/3 cup sesame seeds
  • 1-2 tablespoons of agave or maple syrup
  • pinch of red pepper flakes
  • 1 tablespoon of garlic
  • 1/2 of a medium lemon juice or 1 whole small lemon
  • 3-9 tablespoons of water (based on how thick you want it!)

    Add all of this into your blender and blend, blend, blend until it reaches your desired consistency  You can also add whatever other seasonings that you want as well!
