Healthy doesn't have to mean boring!
You absolutely read that correctly! Healthy. Zucchini. Bread.
And if you’re reading this, you are lucking WAY out because I’m going to give you the recipe!
Here we go:
Preheat your oven to 350 degrees!
Prep: Grate 1 medium sized zucchini (2 cups)
Put that all in a cheesecloth and drain all the water out of it! Set aside!
Ingredients:
2 cups almond flour
1 tsp baking powder
1 tsp cinnamon
1 tsp nutmeg
1/4 tsp salt
1/2 cup sweetener of choice (I used stevia but monkfruit sweetener will be great too!)
2 tsp vanilla
2 eggs
1/4 cup melted butter
Add all of your dry ingredients into a large mixing bowl, mix well! (you can sift, but it’s not necessary!)
Then add in the dry and mix, mix mix! Once that’s all mixed in well, add your drained zucchini and mix once more, lightly so you don’t over mix and make it tough!
Pour that baby in a greased glass pan and pop it into the oven for 45-55 minutes or until golden brown!
Optional: when you have 15 minutes left, mix together 1 tablespoons of stevia, 1/2 tsp nutmeg, 1/2 tsp of cinnamon and then sprinkle it on the top for a crispy, sweet, crunchy crust!
