Another day with me in the kitchen!
I made some goodies today!
Strawberry meringue cookies AND homemade protein granola!
Cookies:
4 egg whites
1/4 tsp cream of tartar
1/4 cup sugar (I used Stevia! Next time I’ll use powdered sugar alternative)
1 tablespoon of strawberry extract (or fresh, up to you!)
A few drops of red food coloring (I recommend gel!)
1/4 tsp of salt to cut the sweetness
Whip the eggwhites until they’re bubbly, then add the cream of tartar! Slowly add in the sugar, then once incorportated add in salt, extract and food coloring! Add to a piping back, plop them on a baking sheet with parchment paper and bake at 225 for an hour or until firm! Then let them cook completely to finishing setting up!
Granola!
1-2 cup of quick oats
1/4 cup syrup (I used sugar free!)
a few tablespoons of olive oil (or coconut!)
1/4 tsp salt
1 tablespoon of cinnamon (you can adjust this, I just LOVE cinnamon)
1 tablespoon of powdered peanut butter
1 tablespoon of quest protein powder
2 tablespoons of slivered almonds
You can add dried fruit, other nuts etc! I just made this for added protein into my diet!
Mix everything together in a bowl, spread on a baking sheet, top with a sprinkle more of cinnamon and almonds and let it bake for 20-22 minutes.
Then let it completely cool on the pan for around 45 minutes, untouched and enjoy!
You can eat this as cereal, top your pancakes with it, add it to your yogurt, or mix it in with your homemade trail mix! This recipe is simple and can easily be manipulated to fit your lifestyle!!
