Mixin' it Up!
Cooking with Shelby! I haven’t shared a recipe in such a long time so here we go!
What you’ll need:
Handful of cashews
1 cup riced cauliflower
2 stalks asparagus
1/3 chopped zucchini
1 stalk green onion
Jalapeno pepper
1 chicken breast (optional)
1 egg white
1 TBS G- hughs sugar free sweet chili sauce
1-2 TSP liquid aminos
Start by cooking your protein however you like it cooked best!
Next:
Chop all your veggies into like shapes and sizes!
Add all your veggies (minus the riced cauli) into a saute pan and turn it onto medium high heat and add a tablespoon of your favorite oil and let the veggies saute together for around 5-8 minutes or until tender to your liking!
Once your other veggies are cooked to your liking, add in your riced cauliflower and cook together with the other veg!
Add in 1-2 tsp of liquid aminos (you can use soy sauce, I just prefer this!)
Once you’re satisfied with the way your cauliflower is cooked, add in your egg and let that cook with your veggies stirring every once in awhile to break it up and so it cooks evenly!
That’s it! Add your veggie goodness to a bowl, add your protein (if you opted for another protein) to the top and add your sweet chili sauce to the top of that and ENJOY!
