Cooking with Shelby!
It’s finally Friday! YASSSS!
I am going to try and incorporate more of my, “diet” with you guys! Cooking healthy foods while keeping your sanity! It’s not all about salads (even though salads are my absolute favorite!)
We’re going to do, “Cooking with Shelby segments!” I will nail down a day of the week where I post new recipes and go completely foodie on all of you! But for today, I think I am going to share my dinner tonight!
Grilled Chicken + Broccoli Alfredo with shirtaki, “pasta”
5 oz of cooked chicken breast: Cooked however you most enjoy it!
1/2 cup of fresh or frozen broccoli
1 cup boiled shirtaki pasta
1 laughing cow wedge
1oz of low fat or low moisture mozzarella cheese
1/4 cup of low carb, low sugar Alfredo sauce
1-3 tablespoons of unsweetened almond milk
1/4 tsp mrs dash garlic and herb seasoning
1/4 tsp pepper
* Next time I make this I’ll do 1/2 cup of shirtaki and a whole cup of fresh spinach!
I am HUGE on meal prep so I pick a day of the week and get my chicken/lean meats prepped up. If this isn’t you, that’s perfectly fine! This meal is super easy and only takes about 45 minutes if you’re not prepped up and about 15 if you are!
Okay! Start by grabbing that skillet! We all have a favorite one! Then get your favorite mixing spoon out, I have a favorite one of those too!
If you have to cook chicken, (serving for 1) Start by cooking up two boneless, skinless breasts with 1 tablespoon of an oil of choice, or opt to use no oil at all and maybe use some coconut cooking spray!
Once that’s done, measure out a 5OZ portion and dice it into cubes.
Next I wipe out my skillet and add 1.2-2 cups of water and bring that to a boil. Once boiling I add my rinsed and drained shirtaki pasta to the boiling water and let that simmer for around 3-5 minutes!
After that’s complete drain the pasta and pour it back into the pan.
Next I add my Alfredo sauce, milk, laughing cow wedge and 1/2 of the cheese and stir it to combine over medium-low heat.
Once that is all combined and smooth, I add my chicken and broccoli and stir to combine that as well. I usually add another tablespoon or so of almond milk if the mix seems just a little too thick!
I let that simmer together for around 3-5 minutes, then I add my seasonings and combine once more!
Put the deliciousness in a bowl or on a plate and Add the remainder of the cheese you had left to the top and enjoy! This meal is delicious, so easy and wont help you pack on unnecessary pounds!
I love that this gives me the pasta feel without all of the unnecessary carbs and fat from traditional pasta!
